For Kitchen Newbies: 5 min Raspberry Chia Seed Jam

Making your own chia seed jam is simpler than you'd think. All you need is 5 minutes and 3 ingredients! Using chia seeds creates a thick, creamy "jam-like" texture that pairs well with any berries. Since it's homemade, you can control what and how much sugar goes in - making it a healthier alternative to commercial jams with are full of sugar and other preservatives!

On top of that, chia seeds are powerful little guys. They are full of fiber, omega-3 fatty acids, calcium, are a good source of plant-based protein, and prevent blood sugar spikes. While this recipe uses raspberries, strawberries and blueberries go perfectly too.

Ingredients
2 cups raspberries (or berries of choice)
2 tbsp chia seeds
2 tbsp warm water
2-4 tbsp honey/maple syrup/agave nectar
½ tsp vanilla extract (optional)

Method
1.    Add all ingredients to a blender and pulse until reaching your desired texture (add some water to help it combine). If you like the jam more chunky, blend it less; otherwise, blend more for a smoother consistency.
2.    Taste and add more sweetener if desired. You can start with 2 tbsp of sweetener, and add more depending on how tart your berries are.
3.    Transfer the mixture to a covered container and let sit in the fridge for at least an hour, preferably overnight.
4.    Enjoy with bread, over your favourite smoothie, or layered between your overnight oats!
